'Symbol Information' on right-mouse-button shortcut menu for a 'Symbol' item.

"Symbol information" is not an action (like "Add to favorites" or "delete"). It is on/off switch for docking Window. Docking windows are controlled from Window menu and you can create keyboard shortcuts for them using Tools->Customize, "Keyboard" tab.
