Have seen some of the data vendor’s feeding their data to AB using this plugin(eSignal). Can I feed my own data to AB via eSignal? Is there any document which explains how to feed data into plugin?

eSignal Plugin is specifically for eSignal data where you have to be a subscriber to eSignal with a valid username and password.
If you have your own data in ASCII format say a .csv file you can import it into amibroker using the menu File import wizard.
