But when I copy to notepad it copies with columns that I don't want

That is not an issue. That works precisely as it should and as designed. All UI settings, including the "Column setup" is for the on-screen display only. Export and Copy-paste always uses fixed layout to ensure interoperability between 3rd party tools regardless of individual user settings.
